Classic cheesecake is always a tasty dessert! While it is definitely delicious with a nice graham cracker crust and a scrumptious berry sauce, I love to use this cheesecake recipe for more than just a plain cheesecake. I use this recipe as a base recipe for other cheesecakes, as well as utilizing it as an incredible filling for cakes and cupcakes!

Equipment:
- Measuring cups
- Measuring spoon
- Microwave safe bowl
- Large mixing bowl (x2)
- Whisk
- Hand mixer or stand mixer
Ingredients:
- 2 blocks (16 ounces or 452 grams) cream cheese,
- 1 cup (200 grams) granulated sugar
- 1 cup (240 grams) sour cream
- 2 teaspoon vanilla extract
- 1 teaspoon salt
- 4 eggs, room temperature
Directions:
- Preheat oven to 325°F (163°C).
- Add cream cheese and granulated sugar into a large mixing bowl. Using a hand-held mixer, mix on a low speed until the ingredients are just combined, and then mix on medium-high or high speed until they are light and fluffy, approximately 3-5 minutes.
- Add sour cream and mix until well combined. Then, add vanilla extract, salt, and mix on a low speed until the mixture is well combined.
- Add 4 eggs, one at a time, and mix until each is just combined with the rest of the batter. DO NOT overmix!
- Pour the cheesecake batter into prepared pan and smooth it into an even layer. Bake for 40-50 minute.
- Once the cheesecake is done, remove from the oven and set aside to cool for at least 20-30 minutes before covering it in plastic wrap and placing it in the refrigerator to cool and set.
