How to Make Easy Pumpkin Mug Cake

Mug cakes are an awesome treat to enjoy during Fall because they are warm, comforting, and just the right amount of cake! That’s why I figured this would be the perfect time to share this scrumptious light and fluffy mug cake recipe!

For a fun alternative option to a warm mug cake, you can also let the cake completely cool, chill it in the refrigerator overnight, and then cut it into little circles of cake. You can take those layers and alternate them with whipped cream, caramel, and pecans to make a cute little personal sized trifle like I did here! I actually made this on a live stream cooking demo I did last Fall with Sac State UNIQUE Programs!

How to Make Easy Pumpkin Mug Cake

Ingredients

  • 1/4 cup (43 grams) all-purpose flour

  • 3 tablespoons granulated sugar

  • 1/4 teaspoon baking powder

  • 1/8 teaspoon baking soda

  • 1/8 teaspoon salt

  • 1/2 teaspoon pumpkin pie spice

  • 2 tablespoons mayonnaise

  • 1/4 cup (56 grams) pumpkin puree

Directions

  • To a mixing bowl, the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and pumpkin pie spice. Whisk to combine and then add the mayonnaise and pumpkin puree. Whisk until just combined.
  • Add the batter to a microwave-safe 12-16 ounce mug that’s been sprayed with non-stick cooking spray. Heat in the microwave for about 60-90 seconds. Once the mug cake is done, remove it from the microwave and let it cool for a couple of minutes.*
  • Add your preferred toppings.** Enjoy!

Notes

  • *I usually like to start with one minute, check the mug cake, and add more time if needed. It should not need any more than 90-120 seconds at the very most. Just make sure not to heat it too long, because people often over-cook mug cakes, which can dry them out or make them rubbery in texture.
  • **For this mug cake, my favorite toppings include a scoop of vanilla bean ice cream, a generous drizzle of homemade caramel, and a nice sprinkle of chopped pecans. This mug cake is super light and fluffy, which made ice cream the perfect way to top it off!
