Ingredients

  • 1/4 cup (43 grams) all-purpose flour

  • 2 1/2 tablespoons granulated sugar

  • 1/4 teaspoon baking powder

  • 1/8 teaspoon baking soda

  • 1/8 teaspoon salt

  • 2 teaspoons spiced apple cider drink mix

  • 1 1/2 tablespoon mayonnaise

  • 2 tablespoons concentrated/reduced apple cider

Directions

  • To a mixing bowl, the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and spiced apple cider drink mix. Whisk to combine and then add the mayonnaise and concentrated apple cider. Whisk until just combined.
  • Add the batter to a microwave-safe 8-12 ounce mug that’s been sprayed with non-stick cooking spray. Heat in the microwave for about 60-90 seconds. Once the mug cake is done, remove it from the microwave and let it cool for a couple of minutes.*
  • Add your preferred toppings.** Enjoy!

Notes

  • *I usually like to start with one minute, check the mug cake, and add more time if needed. It should not need any more than 90-120 seconds at the very most. Just make sure not to heat it too long, because people often over-cook mug cakes, which can dry them out or make them rubbery in texture.
  • **I decided to keep nice and simple with some whipped cream and a sprinkle of cinnamon. This mug cake is one that has a little more of a dense, gooey texture, which is why I opted for a nice light topping.
