Candy Corn. Whether you love it or hate it, this candy is a Halloween staple. As a kid, I really enjoyed candy corn; however, I now find that I can only have a couple of pieces because of their extremely sugary flavor. As an adult, I like to find ways to balance sweet treats, so I decided to create a caramel using candy corn.
This caramel is a bright orange color that is perfect for the Halloween season, while also featuring a smooth texture and a hint of candy corn flavor. Butter, cream, vanilla, and sugar temper the sweetness and make it more palatable. Candy corn lovers, and possibly even some candy corn haters, will enjoy this caramel. Give it a try!
Candy Corn Caramel Sauce Process:
Add the chopped candy corn and water into a medium size saucepan with high sides and place on a medium high heat on the stove.
While the pan heats up, the candy corn pieces dissolve into the water. Stir occasionally to make sure that the candy corn fully dissolves without any pieces sticking to the bottom of the pan and burning. Once the candy corn is fully melted, the water will begin to evaporate.
Let the candy corn vigorously bubble and continue to occasionally stir the melted candy corn. Continue to cook for approximately 5 minutes before removing it from the stove.
While the candy corn does not energetically bubble like granulated sugar in a traditional caramel preparation, make sure to still carefully add in your cream and then the butter, whisking constantly as you do so. Place this mixture back on the stove, on a medium heat, and cook for an additional 1-2 minutes. Stir constantly during this time.
Remove the pot from the stove and add the pure vanilla extract and salt. Once thoroughly mixed, carefully pour into an airtight container. Let it cool until it is closer to room temperature, close the lid, and store in the refrigerator until ready to use.
Notes:
- Safety: Always make sure that you are very careful when making caramel. Sugar melts at a very high temperature, so make sure that you do not get any on your skin as it will result in burns.
- Mise en place: As with any caramel recipe, make sure that you have everything measured out and ready to use before you begin.

- If you want to warm your caramel sauce, place in a microwave safe dish and heat in 5-10 second increments until the caramel is heated thoroughly.
