A delightfully crunchy cookie that dissolves in your mouth like cotton candy, meringues are a great treat any time of the year! One of my favorite things to do with meringue batter is to try new color combinations every time I make them; however, I recently started to pipe meringue cookies into different shapes as well. For Halloween, I decided to make ghosts, pumpkins, and jack-o-lanterns. These are an adorable treat that both kids and parents will adore!
Notes:
- If you want to smooth the meringues after piping them, dab a fingertip into a small bowl of water. Lightly pat the top of the meringue to flatten or smooth the pointed tip. I use this technique for both the top of the ghosts as well as the stems of the pumpkins.

Make the Meringue Batter:
Prepare the meringue batter as described in my Meringue Cookies post, which you can find here. For these meringues, I chose to use pure vanilla extract because I love that flavor. Divide the meringue batter into two large bowls and 4 small bowls. Use orange food gel to color one of the large bowls of batter a nice orange color for the pumpkin meringues. Color the meringue batter in the four small bowls black, brown, green, and yellow. Place a tiny amount of meringue into each corner of the baking sheet, line the baking sheet with parchment paper, and now you are ready to pipe your Halloween meringues.
Ghosts:
Using a piping bag fitted with a Wilton 1A tip, pipe a blob of white meringue onto the parchment paper. Repeat until you run out of white meringue batter. Using a piping bag fitted with a Wilton 3 tip, pipe black meringue batter in elongated eyes and either an open mouth or a smiley-face. Your adorable ghost meringues are ready for the oven!
Pumpkins and Jack-o-Lanterns:
Using a piping bag fitted with a Wilton 4B tip, pipe a blob of orange meringue onto the parchment paper. Repeat until you run out of the orange meringue batter. Using a piping bag fitted with a Wilton 12 tip, pipe a small amount of brown meringue batter for the stem of the pumpkin. Using a piping bag fitted with a Wilton 352 tip, pipe a leaf next to the stem using the green meringue batter. Lastly, to transform your pumpkins into jack-o-lanterns, fit a piping bag with a Wilton 2 tip and pipe a face onto the pumpkins using yellow meringue batter. Your cute pumpkins and jack-o-lantern meringues are ready for the oven!
