Peach Compote

Summer is wonderful time of year because so many delicious fruits are in season and the potential fruit-centered items you can make are virtually limitless. One of the fruits of the summer that has so many delectable dessert possibilities is the peach. Whether they are blended into smoothies or baked into breads or cobblers, peaches are a versatile fruit that has both a lovely sweetness and a flavor that pairs well with other fruits such as berries and apples.

Peach Compote is an awesome way to prepare peaches because you can use it in many ways. Freshly made and served warm over pancakes, waffles, or ice cream would be absolutely delicious. Chilled peach compote can be used to spread on toast or as an incredibly yummy filling for cupcakes, cakes, and French macarons. With the large variety of uses for this compote, give it a try!

Ingredients

  • 1/2 cup water

  • 2 tablespoons granulated (caster) sugar

  • 1/4 cup brown sugar, packed tightly and leveled

  • 1/2 teaspoon cinnamon

  • 2 tablespoons water

  • 2 tablespoons granulated (caster) sugar

  • 2 tablespoons cornstarch

  • 2 1/2 cups diced or brunoised* peaches

Directions

  • Whisk the 2 tablespoons of granulated sugar, brown sugar, cinnamon, and, finally, the ½ cup of water in a medium-sized saucepan. Place the pan on the stove on medium-high heat and bring to a boil.
  • While the mixture on the stove is brought to a boil, mix together the remaining granulated sugar, cornstarch, and water. Stir this mixture into the saucepan on the stove and continue to whisk the mixture until it thickens and looks like a gel.
  • Reduce to a low heat and stir in the peaches. Cook for approximately 10-12 minutes while stirring frequently.
  • Remove from heat and either serve it warm or place in an air-tight container (with the lid off) to let the compote cool for approximately 20-30 minutes, cover, and then place in the refrigerator.

Notes

  • *Brunoise is a fine dice. I personally like to use this cut because it makes it easier to pipe out of a piping bag when filling cupcakes.
