Sparkly, Fabulous New Year Cake Pops

Happy New Year! It is hard to believe that 2019 has drawn to a close and that we have began not only another new year, but a new decade! For me, this past decade has had many milestones: high school graduation in 2011, college graduation in 2017, finally starting my food blog in 2019, and so many other wonderful things in between all these events. I am so happy that I started my blog in 2019 because it allows me to share my creative side with all of you! I was so nervous to put myself out there, but I am so glad that I did! Thank you to those of you who express your continued support! For those of you new to my blog, welcome and I hope that you enjoy everything that I make! My apologies, that is a lot of exclamations, but I am just so excited!

As we begin the new year, I am thrilled for the content I am planning and to see what the future holds for my blog. With the new year, I thought that some yummy and sparkly cake pops would be a perfect treat, so here is how I made my Sparkly New Year Cake Pops:

Step 1: Mix Cake Pop Dough

Crumble the cake, approximately 4 cups, into a large mixing bowl. Add buttercream, ¾ cup, to the mixing bowl and mix until well combined. Add more buttercream as needed until the mixture can keep its shape when rolled into a ball. Make sure not to add too much buttercream because that will make the mixture too soft, will be harder to shape, and will not stay on the lollipop stick as well.

Step 2: Scoop and Shape Cake Pop

Use a medium scoop to scoop out balls from the cake pop mixture. Gently roll the cake pop in your hands to form a smooth ball. Add 1 cup of white candy melts and ½ cup black candy melts to a microwave safe bowl, and heat in the microwave in short increments, approximately 15-30 seconds at a time. Do not burn the candy melts because you will have to start over. Add 1½  tablespoon of vegetable oil to thin the melting candy. Note: You want the candy to just run smoothly off of a spoon, so you may have to adjust the ratio of oil to candy melts; however, I have found that a 1 cup candy melt to 1 tablespoon vegetable oil ratio is great for coating cake pops.

Dip the tip of a lolipop stick into the candy melts and insert it into a cake ball. Repeat until all the cake balls have lollipop sticks. Place the cake pops in the refrigerator (NOT the freezer) for at least 30 minutes – 1 hour. Note: Dipping the lollipop sticks in candy melts before placing it into the cake balls will ensure that the cake balls do not fall off the sticks.

Step 3: Cover the Cake Pops

Using the same melted chocolate from Step 2, dip a cake pop into the candy melts. Shake off as much excess chocolate as possible, and then place the cake pop onto the parchment paper.

Add some silver edible glitter to a small bowl. Once the candy melts have completely hardened, roll the cake pop in the edible glitter until it is fully coated. Tap the stick on the side of the bowl in order to knock off any glitter clumps. Set these aside and proceed to Step 4.

Step 4: Make the Numbers

Place some white candy melts in a small bowl and follow standard melting procedure as described in Step 2. Add a tiny amount (approximately ½ teaspoon) of vegetable oil to slightly thin the candy melts. Add the white candy melts to a piping bag, cut the tip of the piping bag so that there will be a small hole, and pipe “2020” onto parchment paper. Repeat until you have plenty of the “2020”s for your cake pops. Save the rest of the white candy melts for step 5. Note: Make sure to pipe extra “2020”s in case they break. Once they harden, carefully use an offset spatula to slide under the numbers and delicately release them from the parchment paper.

Add some gold edible glitter to a small bowl. Using food tweezers, place a piped “2020” upside down into the bowl. Make sure to fully coat the front in gold glitter. Carefully pick up the “2020” with food tweezers, tap the tweezers on the side of the bowl to shake off any glitter clumps, and place on the parchment paper.

Step 5: Assemble the Cake Pops

Using some of the remaining melted white candy melts, dip the back of the “2020” in the melted candy, and place it on the cake pop. Note: you may have to hold it in place for 5-10 seconds before it adheres to the cake pop. Repeat this process until all your sparkly New Year cake pops are complete. Lastly, enjoy!
