Whimsical Pumpkin Cake Pops

Happy Halloween! And, welcome to Day 4 of Pumpkin Week! It is hard to believe that we have already arrived to the end of October, but before we know it Thanksgiving will be upon us! That is why I chose to post these adorable Pumpkin Cake Pops! These are a whimsical, yummy cake pop that would be great for your Thanksgiving dessert spread. Or, with a little added yellow candy melt added to the outside, these make an adorable jack-o-lantern treat for Halloween.

Step 1: Mix Cake Pop Dough

Crumble the Pumpkin Spice Cake, about 4 cups, into a large mixing bowl. Add approximately ½ – ¾ cup of a binding agent(s) to the cake. For example, I added ¼ cup + 2 tablespoons of Pumpkin Pie Ganache and ¼ cup vanilla buttercream. Add your binders to the mixing bowl and mix until well combined. Add more buttercream if needed until the mixture can be formed into your desired shape with your hands and be able to keep its shape. Make sure not to add too much buttercream and/or ganache because that will make the mixture too soft, will be harder to shape, and will not stay on the popsicle stick as well.

*Alternative Flavor Option:

Instead of using the Pumpkin Pie Ganache, use some espresso chocolate ganache. This will make a cake pop that tastes more like a Pumpkin Spice Latte! You can also find how to make the easy espresso chocolate ganache in my Pumpkin Spice Latte Cupcakes post.

Step 2: Scoop and Shape Cake Pop

Use a medium scoop to scoop out medium-sized balls from the cake pop mixture. These cake pops are going to be slightly bigger, so once all the cake pop dough is measured out, break some of the scoops in half and add them to the other full scoops of cake pop dough. Gently roll the cake pop in your hands to form a smooth ball. Place a popsicle stick into each of the cake balls. Place the cake pops in the refrigerator (NOT the freezer) for approximately 30 minutes – 1 hour. Note: Do not dip the popsicle stick in candy melts before placing it into the cake ball as we want to easily remove the stick after the cake pops are covered in the candy melts.

Step 3: Cover the Cake Pops

Add 2 cups of the orange candy melts in a microwave safe bowl, and heat in the microwave in short increments, approximately 15-30 seconds at a time. As a reminder, do not burn the candy melts because you will have to start over. Once the candy melts are fully melted, add one tablespoon of vegetable oil to thin the melting candy. If more oil is needed to thin the candy melts, add an additional teaspoon at a time until the desired consistency is reached. Take one cake pop and dip it into the candy melts. Place the cake pop onto the parchment paper. After the melting candy hardens, approximately 1-2 minutes, remove the sticks from the cake pops.

Next, add some of the orange candy melts to a piping bag with a very small hole cut in the tip. Hold the piping bag in the very center of a cake pop and pipe the candy melts as you pull away from the center. This will create a line along the side of the cake pop. Repeat this process until you have 8 total lines on the cake pop.

Step 4: Finishing Touches

Take either a bite size bar of chocolate or a piece of a bar of chocolate and cut small it into small chunks. Dip the one end of a chocolate chunk into the orange candy melts and place it on top of the middle of the pumpkin. Your scrumptious pumpkin cake pops are complete and ready to enjoy!

*Additional Decoration Option for Halloween: Jack-o-Lantern Cake Pops:

Add ½ cup of the yellow candy melts in a microwave safe bowl, and heat in the microwave in short increments, approximately 15-30 seconds at a time. Once they candy melts are fully melted, add one teaspoon of vegetable oil to thin the melting candy. You can add more oil to the candy melts if you desire, but it does not need to be as thin of a consistency as the orange candy melts. Add the yellow candy melts to a piping bag and pipe triangles and zig-zag mouths onto parchment paper. Use orange candy melts to attach the eyes and mouths to the cake pops. Your Jack-o-Lantern Cake Pops are complete and ready to enjoy!
