Lovely Lemon Bartini

My mom makes the best lemon bars. I know that everyone likes to say that his or her mom makes the best this or that, but my mom honestly makes the BEST lemon bars. The combination of the love of my mom’s lemon bars and my personal preference for sweet cocktails resulted in the creation the Lovely Lemon Bartini!

I know that all days blend together right now, but it is in fact Friday, so let’s get started!

Prep the Glass:

Add corn syrup to the middle of a plate. Coat the rim as well as the top 1/2 inch to 1 inch of the outer part of the glass. Using a different plate, sift half of the powdered sugar onto the plate, sprinkle the shortbread crumbs next, and finally sift the rest of the powdered sugar over the top of the shortbread crumbs. Dip the rim into the sugar and crumb mixture as well as the top sides of the glass. Make sure that the corn syrup is fully coated. Set the glass aside.

Prep the Garnish:

Using a fresh lemon, cut a slice and remove the inner part of the lemon. All that should remain is the circle of lemon peel. Twist the peel into a spiral shape and then set it aside.

Mix the Cocktail:

Add approximately ½ cup if ice, 6 ½ oz. of lemonade, and 1 ½ oz. vodka to a cocktail shaker. Shake the mixture for approximately 30 seconds, or until the shaker becomes very cold. Strain the mixture into the prepared glass, top it off with the twisted lemon peel, and serve immediately. Enjoy!

Note:

You will have to make or buy shortbread cookies before the cocktail preparation. I recommend making Martha Stuart’s Classic Shortbread recipe, which can be found at here.
