Craveable Cinnamon Apple Sourdough Pancakes

Pancakes are always a delicious breakfast, especially when covered in maple syrupy goodness!

These sheet pan pancakes are one of my go-to recipes and they are also one of my favorite uses for extra sourdough starter. These pancakes are super moist and do not even need butter added to them! The best part is that you do not need to stand over a skillet to make these pancakes! Simply dump the pancake mixture onto a sheet pan and bake all the pancakes at once. What could be better?! These pancakes are perfect for meal prepping, family breakfasts, or a brunch gathering with friends!

Prepare the Equipment:

Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper or aluminum foil and spray with non-stick cooking oil.

Prepare the Sourdough Pancake Batter:

Add the flour, baking soda, and cinnamon into a small mixing bowl. Stir the dry ingredients together and set the bowl aside.

Add sourdough starter, sugar, egg, and Greek yogurt into a large mixing bowl and mix them together with a wire whisk. Once they are thoroughly mixed, add the dry ingredients. Mix until just combined, add the diced apples, and once again mix until just combined.

Pour the pancake mixture onto the baking sheet, spread into an even layer, and bake for approximately 25-30 minutes, or until a cake tester comes out clean.

Cut into squares and serve with maple syrup and/or fresh fruit. Enjoy!

Notes:

  • Greek yogurt is not required; however, the pancake will be quite dry if you do not add some type of fat. Using the Greek yogurt also means that you do not have to add butter when the pancakes are done baking, so they are a little healthier as well.
  • These pancakes freeze really well. Use plastic cling film to wrap 3-4 pancake squares, and then store these individual servings in a plastic freezer bag.
  • You can use just about any apples for these pancakes; however, I personally like to use Granny Smith apples.
  • I usually use all purpose flour, but almond flour is a great substitute.
  • I typically use granulated sugar, but honey can be used instead. The pancakes will not be as fluffy, but they still work out well.
