Hunka Hunka Cookie Love: Banana, Peanut Butter, and Bacon Cookies

Banana, peanut butter, and bacon. A flavor trifecta that combines the sweetness and creaminess of bananas and peanut butter, with salty pieces of bacon. These cookies are a great way to use those bananas sitting on the kitchen counter, instead of making banana bread for about the 10th time during quarantine.

This is a super easy recipe that results in moist, delicious cookies, so let’s get to it!

Make the Cookies:

  1. Preheat the oven to 375°F (191°C). Line 2 baking sheets with either parchment paper or silicone baking mats.
  2. To a medium sized mixing bowl, add flour, baking powder, baking soda, and salt. Whisk these ingredients together and then set the bowl aside.
  3. Add butter, granulated sugar, and brown sugar to a large mixing bowl. Whisk to combine the butter and sugar together for about 1-2 minutes. Add the eggs, pureed bananas, and vanilla extract. Mix until well combined.
  4. Stir in the peanut butter morsels and bacon. Make sure not to mix too much at this step as it will result in more gluten development and a tougher cookie.
  5. Using a large cookie scoop, scoop the batter onto the sheet trays and bake until the cookies are light and golden brown, approximately 15-18 minutes per tray.
  6. Let them cool completely on the baking sheet.

These cookies are yummy on their own, but they are also fantastic to incorporate into other desserts:

A cookie with a scoop of vanilla ice cream and a drizzle of caramel or chocolate sauce hits the spot!

Another yummy option is an upgraded version of the above dessert: an ice cream sandwich drizzled with caramel. Chocolate syrup would have been a great option as well, but I was in a more caramel kind of mood that day.

Ingredients

  • 1/2 cup unsalted butter

  • 1 1/2 cup (16-18 pieces) crisped bacon

Notes

  • If you have a peanut allergy, or are not a fan of peanut butter, swapping the peanut butter morsels for chocolate chips will be delicious as well!
