How to Make Easy & Yummy Remarkable Rainbow Truffles

Rainbow desserts are always so much fun! The mixture of bright colors is guaranteed to make you happy and put a smile on your face. I not only love coming up with rainbow dessert ideas, but I also love making truffles because they sound super fancy, but are actually quite easy to produce. These are super fun and very simple, so they are perfect for beginner dessert makers. The brightly colored ganaches look kind of like an edible playdough, so these would also be a really fun project to do with your kids!

Ingredients:

  • 2 cups white chocolate morsels
  • 1/2 cup heavy whipping cream
  • Pinch (about 1/8 teaspoon) salt
  • Color Food Gels

Equipment:

  • Medium-sized mixing bowl
  • Spatula
  • 6 bowls
  • Butter knives or spoons
  • Sheet Tray
  • Parchment paper
  • Plastic cling film

Directions:

  1. To a medium mixing bowl, add 2 cups white chocolate and ½ cup heavy whipping cream. Microwave for 1 minute, let it sit for about a minute, and then carefully mix the white chocolate and cream together. If there are any pieces of white chocolate that have not fully melted, heat in the microwave for an additional 10-15 seconds and stir. If there are still pieces of white chocolate, continue to heat and mix in small increments until the mixture is completely smooth. Add a pinch of salt (about 1/8 teaspoon) and mix until completely smooth.
  2. Evenly divide the ganache into 6 separate bowls. To each bowl add a tiny amount of color food gel. A small amount goes a long way with food gels, so only add a little at first and then add more when you need it.
  3. Cover the bowls with plastic cling film, making sure to press the plastic wrap onto the top of the ganache to prevent a film from forming. Place these in the refrigerator for at least a couple of hours to let the ganache fully set.
  4. Remove the plastic wrap from the bowls and scoop out little pieces of the ganache. Combine one small piece of each color and use the palms of your hands to roll them into a ball. Keep doing this until all the ganache has been rolled into truffle balls. You can either keep them separated, or twist and swirl the colors together to make a swirled or tie-dye design. Place the tray in the fridge to allow them to firm up, about 30 minutes to 1 hour.
  5. Using tempered white chocolate, or even some white chocolate candy melts, coat the truffles in the melted white chocolate and place on a piece of parchment paper. Add some colorful sprinkles to the top before the coating hardens. Once the truffles coating sets, enjoy!
