A Fabulous & Easy Dessert for Two: Red Velvet Mug Cake

This mug cake is so tasty! The cake is moist, has such a gorgeous red color, and tastes so good with the whipped cream and mini chocolate chips! This recipe is so easy and is a super quick treat to enjoy with your love on a cozy night at home!

Ingredients:

  • 1/2 cup all-purpose flour
  • 6 tablespoons granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 tablespoon powdered buttermilk
  • 1 1/2 teaspoon unsweetened dark cocoa powder
  • 1/8 teaspoon salt
  • 6 tablespoons milk
  • 1/2 teaspoon distilled white vinegar
  • 2 tablespoons mayonnaise
  • 1 teaspoon red food gel color
  • Whipped Cream
  • 2 teaspoons mini chocolate chips, divided

Equipment:

  • Medium mixing bowl
  • Measuring spoons
  • Measuring cups
  • Whisk
  • Rubber spatula
  • 2 mugs

Directions:

  1. To a medium mixing bowl, add the flour, sugar, baking powder, baking soda, buttermilk powder, unsweetened dark cocoa powder, and salt. Give that a quick whisk to thoroughly combine all the dry ingredients.
  2. To the same bowl, add the milk, distilled white vinegar, mayonnaise, and red food gel color. Whisk everything together until it is just combined.
  3. Spray two mugs with non-stick cooking spray, and then divide the batter between the two mugs as evenly as possible. Place the mugs in the microwave and heat for 60 seconds. Then, heat for an additional 20-30 seconds at a time until a cake tester inserted into the mug cakes comes out clean. The total cooking time should be between 2-2 ½ minutes.
  4. When the cakes are done, let them slightly cool for about 2-3 minutes.*
  5. To finish them, add a dollop of whipped cream.** Then sprinkle about 1 teaspoon of mini chocolate chips on top of each mug cake.

Notes:

  • *You can either eat them while they’re hot or wait for them to cool even more.
  • **Vanilla ice cream or cream cheese whipped cream are also great options.
