Butterscotch Mousse: An Easy and Delicious Pairing for Cake, Cheesecake, and More!

This recipe was developed through my longing for a different kind of filling for Carrot Cake. It has a light, subtle flavor of butterscotch and a silky, smooth texture. Honestly this is one of my favorite fillings I have ever made for carrot cakes!

Equipment:

  • Measuring cup
  • Liquid measuring cup
  • Measuring spoon
  • Microwave safe bowl
  • Large mixing bowl (x2)
  • Whisk
  • Hand mixer or stand mixer

If you’re searching for a hand mixer, I recommend this KitchenAid hand mixer, which is the one that I use:

Ingredients:

  • 3/4 cup butterscotch chips
  • 3/4 cup white chocolate chips
  • 1/2 cup heavy whipping cream
  • Pinch of salt
  • 1/2 cup granulated sugar
  • 1 1/2 cups heavy whipping cream

Directions:

  1. To a medium microwave safe bowl, add the butterscotch chips, white chocolate chips, and the 1/2 cup of heavy whipping cream. Heat in the microwave for 1 minute and then mix it together. If there are still white chocolate pieces, heat for an additional 20-30 seconds, until everything is melted. Add a pinch of salt, mix, and then cover it with plastic wrap and place it in the fridge until completely chilled.
  2. Next, add the granulated sugar and the 1 ½ cups of heavy whipping cream to a large mixing bowl. Whip to stiff peaks.
  3. Add the butterscotch ganache to a large mixing bowl. Add half of the whipped cream and fold it into the butterscotch ganache until it’s fully mixed together. Add the rest of the whipped cream and fold it into the mixture.
