Equipment:

  • Large mixing bowl
  • Measuring cups
  • Measuring spoons
  • Whisk (x2)
  • Rubber spatula
  • Baking sheet pan
  • Aluminum foil
  • Small mixing bowl
  • Chef knife

My favorite knife set because they both work well and look so cool!:

Directions:

  1. Preheat the oven to 375°F (191°C).
  2. Start with 2 ¼ cups of all purpose flour in a large mixing bowl and ¼ cup of flour in a small bowl on the side. To the large bowl of flour, add baking powder, salt, dried parsley, dried sage, dried rosemary, and dried thyme. Give that a quick whisk and then add the minced garlic and the plain Greek yogurt.
  3. Use a rubber spatula to mix this together until it starts to form large clumps of dough. Switch to using your hands to mix the dough together. If the dough is too sticky, add more of the extra flour and continue to mix. Mix until it is no longer sticky and comes together in one cohesive ball of dough. Stop mixing at this point.*
  4. Transfer the dough ball to a foil lined baking sheet that has been sprayed with non-stick cooking spray. Press down and shape the dough ball into a heart, making sure to keep the perimeter a little thicker for the crust.** Bake the pizza crust at 375°F (191°C) for 35-40 minutes.
  5. While the pizza crust bakes, prepare the tomato sauce. To a small mixing bowl, add tomato sauce, minced garlic, ground black pepper, granulated garlic powder with parsley, dried parsley, dried thyme, dried oregano, and an optional light pinch of salt. Give that a quick whisk until it is thoroughly combined.
  6. Once the crust is ready, add the sauce and spread it over the center of the pizza. Next, sprinkle half of the shredded cheese, then add the toppings, and finally sprinkle the other half of the shredded cheese on top of the pizza.
  7. Before placing it in the oven, fold the excess foil to cover the crust of the pizza. This will ensure that the cheese melts and that the crust will not brown too much.
  8. Bake at 425°F (218°C) for about 10-15 minutes, or until the cheese is nice and bubbly on top.
  9. Let the pizza cool for about 5 minutes before cutting into it.

Notes:

  • *Unlike other bread, like sourdough, we do not want to knead and mix this dough too much because it will result in a tougher flatbread.
  • **If you need to, use some of the extra flour, lightly flour your hands and the top of the ball of dough.
