Irresistible Snickerdoodle Truffles

Welcome to Day 2 of Snickerdoodle Week! I am so excited to introduce this particular treat because I love coming up with new truffle ideas. When making truffles, I never use white chocolate because it is insanely sweet. I typically only use dark or semi-sweet chocolate because they offer better flavor and a better balance to the overall sweetness of the truffles. However, when it comes to the snickerdoodle flavor profile, real chocolate would completely change the type of dessert. Delicious? Heck yes! Snickerdoodle flavor? Not so much. So, I was stuck with using white chocolate.

While planning the construction of this truffle, I had an epiphany. Snickerdoodle cookies have notes of caramelization from the baking process in the oven, so caramelized white chocolate would be the perfect truffle base. As it turns out, caramelizing white chocolate is extremely easy! So, before I make you and myself salivate even more over discussing snickerdoodle truffles, let’s make them!

Caramelize the White Chocolate:

This process is not only incredibly easy, but the added depth of flavor and tempering of sweetness really takes the white chocolate to a whole other level.

The two methods for caramelizing white chocolate use either an oven or a microwave. The microwave method is the one that I used to make these truffles.

  • Oven Method: For this method, you spread your white chocolate out onto a sheet pan and bake the white chocolate on a very low heat, 250°F (121°C). Every 10 minutes, you remove the sheet pan and mix all the white chocolate around to ensure that it does not burn and that it cooks evenly. This method takes a lot longer to complete, however, you can work on other things between mixing the white chocolate around.
  • Microwave Method: For this method, you add 2 cups of white chocolate to a microwave-safe bowl. Heat for 1 minute and then use a rubber spatula to stir the mixture. Heat again for 45 seconds – 1 minute and then stir again. Once the white chocolate is fully melted, heat it for 15-20 seconds at a time and ensure that you thoroughly mix it in between every heating. You will notice that the white chocolate will start to slightly darken in color and will sometimes seem to thicken and look gritty. Continue to persevere and thoroughly mix it between every heating session in the microwave. Once the white chocolate has a nice, deep tan color, you may proceed to the next step.

Make the Ganache:

Add the ½ cup of heavy whipping cream to a different microwave-safe bowl. Heat for approximately 30 seconds – 1 minute. Add the cream and use either a whisk or the spatula to mix the cream into the caramelized white chocolate. Add between 1/8 and ¼ teaspoon of salt, and thoroughly mix it into the ganache. Cover the ganache with plastic wrap, making sure to press the plastic wrap onto the surface of the ganache so that it will not form a skin on the top. Let it cool until it is close to room temperature and then place in the refrigerator for at least 2 hours.

Roll the Truffles:

Using a small cookie scoop, scoop the ganache into small balls and place them on parchment paper. Next, put on a pair of either nitrile or kitchen gloves and roll the truffles into uniform balls. Note: You do not have to use gloves, just make sure that your hands are very clean. Additional Note: If the ganache becomes too soft while rolling the truffle balls, you may need to place them in the refrigerator for 10-15 minutes to firm up before the final step. Proceed to the next step.

Coat the Truffles:

Add 2 tablespoons of cinnamon and 2 tablespoons of granulated sugar in a small bowl and thoroughly mix them together. Add 2-3 truffles at a time and roll them around until they are fully coated in the cinnamon and sugar mixture. Set them aside and continue to coat the rest of the truffles. Once they are all complete, your snickerdoodle truffles are ready to enjoy!
