Valentine Galaxy Cake Cookies

One thing you should know about me is that I LOVE galaxy themed things! I first made some galaxy cake cookies last year when I was first testing my adapted version of Preppy Kitchen’s cake mix cookie recipe. When I was thinking about what kind of yummy and fun things to make for Valentine’s Day this year, I decided to make the galaxy cake cookies with a Valentine twist. So, let’s get started.

Ingredients:

  • 2 cups (280 grams) all-purpose flour
  • 1 cup (200 grams) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 baking powder
  • 1 stick (1/2 cup or 110 grams) unsalted butter
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon black food gel color
  • 1/4 teaspoon red food gel color
  • 1/8 teaspoon pink food gel color
  • 1/8 teaspoon purple food gel color
  • Wilton Liquid Color, White (Edible White Food Paint)
  • Pink heart edible sprinkles/accents
  • Edible silver glitter spray
  • Edible gold glitter spray

Equipment:

  • Large mixing bowl
  • Sifter/strainer
  • Measuring cups
  • Measuring spoons
  • Whisk
  • Hand mixer/stand mixer
  • Small bowl (x3)
  • Butter knife (x3)
  • Medium-size cookie scoop
  • Parchment Paper
  • Baking Sheet
  • Food Paint Brush

Directions:

  1. To a large mixing bowl fitted with a sifter, add the all-purpose flour, granulated sugar, salt, and baking powder. Once these ingredients are completely sifted, give it a quick whisk and then add the unsalted butter. Mix this on low until it is thoroughly mixed and resembles a crumbly mixture. Add the eggs and vanilla extract. Mix just until it becomes a cohesive cookie dough.
  2. Next, add about 1-2 tablespoons of cookie dough into a small bowl. Repeat with 2 more small bowls and then set them aside. To the remaining batter add the black food gel color, and thoroughly mix it into the dough. Then, dye the cookie dough in the first small bowl with red food gel color, the second with pink food gel color, and the third with purple food gel color.
  3. Using a medium size cookie scoop, scoop the black cookie dough onto a parchment paper lined baking sheet. Make sure to leave 1-2 inches between the cookies because they spread while baking. Now, using a butter knife, swirl the Valentine colored cookie doughs on the tops of the black cookie dough balls. Have fun with this part! Make sure to add at least a little bit of each cookie dough to the tops of the cookies, but do not add too much because you still want to see some of the black cookie dough to really have that gorgeous galaxy look.
  4. Now, take a food paint brush, dip it in the edible white paint, hold it about 4-6 inches above the cookies, and hit the back of the brush with your fingers. This will create a star splatter effect. (Fair warning, this part will get a little messy.)
  5. Next, add a sprinkle of edible pink heart sprinkles/accents to the tops of the cookies. Finally, for an extra pretty pop, spray edible glitter onto the cookies. Bake at 350°F (177°C) for 14-16 minutes. Let the cookies cool completely before removing them from the baking sheet.

These cake cookie have a lovely vanilla flavor and wonderful, soft texture. They are also just so pretty to look at because of the multiple colors, edible glitter, and pink hearts!
