How to Make the Perfect Cocktail for Summer: Nectarine & Limoncello Summer Cocktail

There is nothing quite like a cold, refreshing cocktail on a hot summer evening! Summer is also stone fruit season, so peaches, plums, apricots, and nectarines are in abundance. In honor of these sweet Summer fruits, I decided to make a cocktail whose main ingredient is nectarine juice. This cocktail could not come at a better time because every day of this next week or so in Sacramento is supposed to be over 100°F!

This cocktail is sweet, tart, and refreshing! If you like cocktails with a stronger kick, replace some of the nectarine juice with vodka and limoncello. If you don’t drink alcohol, then simply replace the alcohol components with some lemonade!

Now let’s break out those cocktail shakers and make this perfectly balanced sweet and tart drink!

Ingredients:

  • 1 oz. vodka
  • 1 oz. limoncello
  • 6 oz. nectarine juice
  • 1 oz. lemon juice
  • 1 teaspoon granulated sugar
  • Pinch of salt
  • Ice
  • Lemon wedge for garnish (optional)

Equipment:

  • Knife
  • Food processor
  • Large mixing bowl
  • Strainer/Sifter
  • 1 cup liquid measuring cup
  • 1 oz. liquid measuring glass
  • Teaspoon
  • Serving glass

Directions:

  1. Remove the skin of the nectarines and cut all the flesh off of the pit. Add the nectarine pieces into a food processor and puree them until completely smooth. Pour the puree into a large bowl fitted with a strainer/sifter on top. This will make juice with a smoother consistency.
  2. Fill a cocktail shaker about half-way with ice. Then, to the shaker, add vodka, limoncello, nectarine juice, lemon juice, sugar, and salt. Put the top on the cocktail shaker and shake until all the ingredients are well mixed and cold, about 30-45 seconds.
  3. Pour into your desired glass and add an optional lemon wedge garnish to make it look extra fancy. Enjoy!
